   LowFat Alfredo Sauce 
 From the kitchen of Sue & Jim Flath 

2 teaspoons margarine 
1 tablespoon flour 
1 cup skim milk 
1/2 cup chicken stock 
1/2 cup Parmesan cheese 
basil, salt & pepper to taste 

Melt margarine. Add flour to make a roux by stirring over medium heat. Gradually add milk and stock stirring constantly till sauce thickens. Stir in Parmesan cheese and seasonings. 

Serve over 12 ounces of cooked (al dente) pasta --any shape. To make interesting, tasty and low fat dishes add any of the following combinations to the pasta: 1) steamed veggies (broccoli, carrots, corn, squash, peas or whatever is left over in the fridge). 2) sauted mushrooms and almonds. 3) Grilled chicken breast. 4) Prawns, scallops and flaked fish.
