Bread Muffins or Sticks

Sift together
3/4 cup all purpose flour
2 1/2 teaspoons baking powder
1 tablespoon sugar
3/4 teaspoon salt
Add
11/4 cups cornmeal
In a separate bowl beat
1 egg
Then beat in
2-3 tablespoons oil
1 cup milk
Combine all ingredients with a few rapid strokes. Put batter in
a hot greased pan. Bake in 425 oven. Sticks bake in 15 minutes.
Bread or muffins need 20-25 minutes.
***For extra punch Nancy likes to add a handful of shredded cheddar
cheese, minced jalapeno peppers and small bits of cooked ham. |
