Apricot Nut Bread
From the kitchen of Mary Jones

1 cup dried apricots, chopped 

1 cup sugar
1 cup quick cooking oats
3/4 cup whole wheat flour
1/4 cup flour
1/2 teaspoon sald
1/2 teaspoon baking soda 

1/2 cup orange juice concentrate
1 egg
2 Tablespoons vegetable oil
1 cup chopped walnuts 

Place the apricots in a sauce pan with just enough water to cover them and cook until they are plump and the water is absorbed (about 15 minutes). Set aside. 

Combine sugar, oats, flours, salt and soda, then stir in the orange juice, egg and vegetable oil. Mix in the apricots and nuts. 

Place in a greased 9 x 5 x 3 loaf pan. Bake at 350 for about 1 hour (until edges begin to brown and inserted toothpick comes out clean.)
